BLUEBERRY CAKE (all ingredients room temp)
ingredients * 2 cups all-purpopse flour, sifted * 2 tsp baking powder
* 1 tsp baking soda 1/2 tsp salt 2 large eggs
* 1/3 cup sour cream * 3/4 c white sugar 1 stick of softened butter
* 1/2 c milk, or buttermilk, or soy milk * 1 tsp vanilla extract 2 cups fresh or frozen blueberries
Preheat oven to 350 degrees * Grease and flour a 8x13”cake pan * With a mixer, mix butter with sugar until fluffy. Add eggs, one at a time sour cream, and vanilla. Continue to Beat. * In a small bowl, sift flour with baking powder, baking soda and salt. Now add dry to wet ingredients. * To the butter mixture, alternative by adding milk and then flour 3 total times. mix well. Reserve 1/2 c of the blueberries fir the top. If batter is too thick thin out by adding tablespoons of milk until desire consistency. * Spoon batter into a greased and floured pan 8x13” pan. Sprinkle top with remaining blueberries and a tablespoon of sugar. * Bake at 350 degrees for 30-35 minutes, or until cake tests done. Partially cool in pan on wire rack. Cut cake and serve. ....
